Rainbow Bunch Carrots with  Dill

This week’s produce basket from Backyard Produce had the usual deliciousness, but it also included a surprise – Rainbow Bunch Carrots!  I have never seen these but I was SO excited to make them!  This recipe is super simple and all the variety of colors means a variety of vitamins.
 
Begin by peeling the carrots, then slice into bite-sized pieces. 
 
 
In a pan, add a tablespoon of butter, cut carrots, 1 tsp of dill and cover. 
Allow to cook for about 10-15 minutes, stirringoccasionally 
Add this point, deglaze the pan with 2 tablespoons of a dry white wine. (note: if you don’t have wine you can use chicken stock or if needed, water.)
 
Cook carrots until fork tender 

 

Purple carrots have yellow centers!
Add more dill and salt to taste.  Enjoy this colorful dish!
