Thai Green Curry Mussels
I had two inspirations to make this recipe:
#1 – I tried to new fishmonger in Charlotte that has great fish for a reasonable price – Catch On, in Plaza Midwood.
#2 – A local restaurant, Good Food, has an amazing dish I always order. Great date item to share between two people.
 
This was my attempt to recreate it (thanks for the inspiration, Ryan), and utilize great seafood!



Ingredients: 
1 tbsp coconut oil
1 tbsp green curry paste
1 tsp grated ginger
1 tsp garlic, minced
1/2 can (lite) coconut milk
1 tbsp fish sauce
1 tbsp lime juice
1 lb fresh mussels, cleaned and beards removed
1/4 cup fresh cilantro, chopped (serve some for garnish)
Naan or grilled pita bread (for sopping up the yummy sauce!)

Directions: 

In large pot heat coconut oil, curry paste, ginger, and garlic. Cook for about 1 minute. Stir in coconut milk and lime juice. Bring to a boil. Stir in mussels. 


Cover and cook for 2-5 minutes. Add Cilantro.

Cook 3 minutes longer or until the mussels open. (Mine were cooked and opened in 5 total and did not cook longer based on this.) 






(note: if the mussels do not open, do not eat them.)





Serve warm with toasted bread and topped with extra fresh cilantro.
