Grilled Salmon with the zesty lime sauce.

The brightness of the lime, the easy of the work, and smokiness of the grill really makes this a perfect summertime entree! It can easily be made in the kitchen if the weather turns for the worse, but one way or the other, it needs to be made.

Served alongside: Grilled Zucchini, Gnocchi, & Tomato Salad. (link active 7/7/20.)

Ingredients:

4 (6 oz) skinless salmon filets
3 tbsp olive oil, plus more for grill/pan
1 tsp lime zest (Zest of 1/2 lime or so)
3 tbsp fresh lime juice
3 cloves garlic, crushed
Salt and pepper, to taste

Directions:

In a dish for marinating the salmon (ex: baking dish), whisk together olive oil, lime zest, garlic, and seasoning with salt and pepper to taste. Place fish in baking dish and cover. Allow to marinate in fridge for 15-30 minutes, then flip and marinate for 15-30 minutes longer.

Preheat the grill over medium high heat.

Place salmon on grill and grill about 3 minutes per side or until just cooked through.

When in quarantine, you use what fish you have! Random salmon pieces lol.

While salmon is cooking, use marinade to make a sauce. Either bring to a boil in a saucepan, or microwave for 2 minutes.

Allow salmon to rest 5 minutes before serving.
