Best Meatball Ever!

This delicious meatball isn’t something to be on Rachel Ray’s 30 Minute Meals, but give yourself some time, and these delicious balls of meat are great for freezer and cooking up again.

Add the following ingredients into a bowl:
1 lb ground beef (I use the leanest I can find, 93% or 97%)
6 oz. dried bread crumbs with Italian Seasoning
3 Eggs
4 oz. milk (skim for me)
(for the following ingredients I used my food processor – it was a life-saver!)
6 oz. graded Parmesan cheese
3 oz. grated onion
2 oz. chopped basil leaves (feel free to use the preground kind you keep in the fridge.)

Using your hands, mix thoroughly.  If the mixture is too wet, continue to add bread crumbs until thicker.

Want a great tip? Use a small scoop to create golf ball sized meatballs.  Place them on an aluminum foil lined baking sheet, (and some extra oil spray to help with the non-stick aspect.)

Bake at 350 degrees for about 35-40 minutes, and VOILA!

Feel free to cook earlier, and then re-heat in spaghetti sauce. Yum!
