Christmas Tree Pitas

Happy Holidays everyone!  I certainly love themed food, so every holiday is an exciting opportunity for me to make something new!  This year I didn’t have as many opportunities to make dishes, so this was pretty much it. I have to say, it turned out really delicious and super cute.

It’s so easy though, and anyone can make it!

Preheat oven to 400.

Cut one package of whole wheat pitas into quarters and halve the pretzel sticks.  Stick half of the pretzel stick into the base of the pita.

(I admit, I forgot to take a few pictures in here as I hurried to get ready for the Christmas party at the same time.)

Baste your triangles with olive oil (or spray with olive oil spray) and sprinkle with salt and Italian seasoning.
Bake for 7 minutes, take out, turn over, repeat above steps and bake for another 7 minutes.

Let cool.

In a bowl, mix 2 cups of pre-made guacamole, 1 cup Greek yogurt, 2 tbsp of lime juice, and 1 tsp crushed garlic.

(note: I wouldn’t recommend the Dean’s brand, but something similar to Wholly Guacamole. I actually used the Walmart brand, so feel free to make it your own.)

(Make sure to taste it at this point and decide if it needs anything to be delicious.)

Next, spread your guacamole mixture onto your baked pita triangles.

Top each triangle with finely chopped red bell peppers.

I hope you have a wonderful holiday with family and friends!
