Zucchini and Turkey Sausage Boats

I have been wanting to make this recipe for a while now, and had all of the ingredients in the house the other evening. I tried to take a simple recipe and make it even easier. (Let’s be honest here, I made this while I had broken toe, so you don’t have to be on your feet too long!) 
Make this any busy night of the week.


  • 1 cup marinara sauce
  • 4 medium zucchini (or yellow squash)
  • 1 package Turkey Sausage, cooked
  • 1 cup shredded mozzarella
  • 8 tsp freshly grated Parmesan cheese


Preheat oven to 350 degrees.

Cut zucchini in half and hollow out seeds with a spoon. (I used some yellow squash too.) 

Cook or heat sausage through.

Place 1/4 cup or so of sausage in the “boat” of each of the vegetables until full. 

Top with marinara sauce.   

Top with freshly grated parmesan and shredded mozzarella cheese.

Cover with foil and bake for 30-45 minutes, until the cheese is melted and the zucchini (squash) is cooked through.
