Wheat Berry Salad
with Cherries, Mint, and Feta
I had encouraged my father to buy some new, whole grains, and he came home with Wheat Berries. These have a tan color and as sold in hard or soft processed. I didn’t know anything about this before making this dish. So for those who don’t know, they are grains with at least 15% protein. You’ll often find them for cereal, added to salad, or baked into bread.
This recipe would also be great with any grain of your choice: Farro, Couscous, Bulgar, etc.

Ingredients:
1.5 cups hard wheat berries (you can use another grain too though!)
1 cup fresh cherries, pitted and halved
1 scallions, chopped
½ cup parsley, chopped

¼ cup mint, chopped
2 tablespoons crumbled feta
3 tablespoons extra virgin olive oil
2 tablespoons lemon juice
Salt and Pepper, to taste
Directions:
In order to cook the wheat berries, place berries in a medium pot and cover with 2 inches of water over the berries. Bring them to a boil, and cook for 45 min – 1 hour, or until tender. Drain.
While ‘berries’ are cooking, prepare cherries, scallions, parsley, and mint.
In a large bowl, combine wheat berries, olive oil, lemon juice, and all previously chopped ingredients. Season with salt and pepper (if necessary – mine didn’t require any.)
