Sausage, Lentil and Spinach Stew 

(in a slow cooker)

Happy New Year!  I wanted to ring in a new year with those classic signs of luck: Pork (for forward progress), Lentils (swell and look like coin), and spinach (green for money).  Plus, it has the bonus of being prepared in the slow cooker (in case your New Years Eve celebration was extra ‘celebratory’!)
The recipe serves about 10-12 (and in my case – lazy movie watchers.)  Serve with cornbread
 
Ingredients:
2 cup lentils
4 cups beef broth
1 package hot sausage,(sliced or if using loose sausage, cook and crumbled)
2 cup chopped carrots
2 (14.5-ounce) can diced tomatoes (fire-roasted would be ideal)
1 bag fresh spinach
Hot Sauce (optional)
 
Directions:
 
Rinse lentil under cold water and place into the slower cooker with the beef broth, cooked sausage, can of tomatoes, and chopped carrots. 
 
Cook on high for 3 hours, or until lentils are cooked.
Add fresh spinach. As it wilts, stir and add more. 


 


Serve warm with cornbread (and hot sauce if you want an extra kick!)
