Mini Oreo Cheesecakes
These little cheesecakes are the perfect small bite to bring to a party. It has the creaminess of cheesecake, plus the hint of chocolate from the oreo.
(note: this also works just as well with regular oreos and muffins. This recipe actually made 24 minis and about 6 regular ones.)
Ingredients:
24 mini-muffin paper liners
2 pkg. (8 oz. each) Cream Cheese, softened
½ cup sugar
½ cup sour cream
½ tsp. vanilla
2 eggs
Directions:
Place 1 mini-oreo in each of the paper-lined mini-muffin cups. Chop remaining cookies.
In a large mixing bowl, beat cream cheese and sugar until well blended.
Add sour cream and vanilla; mix well.
Add eggs, one at a time, beating until all is mixed well.
Stir in chopped oreos.
Spoon into muffin tins.
Bake 15-20 minutes or until centers are almost set. Cool. Refrigerate for 3 hours.
(note: I tried adding sprinkles, but it didn’t help the dish.)
