Chicken Tenders in a Peanut Miso Sauce
I first tried this original recipe (listed at bottom and made with spaghetti squash, broccoli, and chick peas) and loved this sauce. I think you can use it in a combination of ingredients. I wanted to use this protein and vegetable to make it basically a carb-free dish, and full of protein. It really is delicious and versatile.
In addition to the Peanut-Miso Sauce below, ingredients include chicken tenders, oil to cook in the pan, and broccoli/slaw mix.
Directions:
Sear chicken tenders in a pan until just cooked through. Follow directions on package of broccoli to steam in the microwave. Top chicken and broccoli with peanut-miso sauce
Peanut-Miso-Sesame Sauce

3 tbsp peanut butter
1.5 tsp white miso
1 tbsp Bragg’s Liquid Aminos (or soy sauce)

1 tbsp toasted sesame oil
1/2 tsp Aleppo chili flakes
1/4 cup water, to thin to your desired consistency

1. Mix all ingredients together in a small bowl. It will thicken once cooled.
