I love this simple appetizer for so many reasons. First, it’s only 6 ingredients. Second, two of the 3 main things you need are grown in my parent’s yard. Lastly, you can make a large batch for a family, or a few small bites.
Ingredients:
Cherry tomatoes, red or yellow
Basil Leaves, torn if large
Fresh mozzarella, cubed, or use the balls
Balsamic Vinegar
Extra Virgin Olive Oil
Salt and Pepper (optional)
Toothpicks/Skewers

(note: Our homegrown tomatoes were smaller, but if you want them to stand up, slice the tomatoes in half and stand them up as the base.)
Directions:
Prepare your ingredients by tearing your basil and cutting your mozzarella.
On a toothpick, add mozzarella, basil (folded), and tomatoes. Feel free to do whichever order you prefer.
Place finished skewers on a serving platter.
Drizzle balsamic vinegar and olive oil lightly over skewers. Sprinkle with salt and pepper (optional.)
Serve room temperature.
