A lot of people always wonder what that green fruit covered in a husk is, but this slightly sour “tomato-like” vegetable. However, once you take off the husk and rinse it, it’s very easy to work with. More information: Tomatillo Information – This is crazy-easy, and a nice change in place.
Serve over: Green Chicken Enchilada Dipor Margarita Chicken Dip (instead of the tomato pico.)
Ingredients:
4 tomatillos, husks removed, largedly chopped
1/8 medium onion, chopped (red optional)
1 jalapeno, seeds removed, chopped
1 garlic clove, finely grated
3 teaspoons lime juice
2 teaspoons fresh cilantro, finely chopped
salt to taste
Directions:
In a medium bowl, toss tomatillos, onion, jalapeños, garlic, lime juice, cilantro, and salt. Adjust seasoning as needed. Cover and chill for at least 1 hour.
Serve with chips or over your favorite Mexican dish.
