Grilled Shrimp and Pineapple Skewers


This appetizer of Grilled Shrimp and Pineapple Skewers is so incredibly simple, and yet being shrimp it feels very fancy.  My inspiration for this recipe was the movie, Moana.  The Polynesian feel definitely hit home with this app, and the ladies loved it while watching the Oscars. 


1 lb shrimp, peeled and deveined
1/4 of a pineapple, cut into 1/2 inch pieces
skewers, soaked in water
Asian/Polynesian Sauce
fresh herbs, chopped (optional) 

Skewer the shrimp and pineapple pieces. 

Heat grill over medium-high heat.  Add skewers, flip after about 2-3 minutes.

Brush sauce on cooked side while cooking 2-3 more minutes. Brush other side. 

Flip back to sear sauce about 30 seconds each. 

Sprinkle fresh herbs, like cilantro or parsley, over for serving. 

Serve Grilled Shrimp and Pineapple Skewers with extra sauce.
