Smoked Salmon is something great to keep around in the freezer whenever you need to whip up a super quick, but fancy, appetizer! I had everything on hand for a pool party (except the Chive Cream cheese, but I went to buy the whipped so that it’s easier to mix in.) It’s also a quick appetizer, that needs no heating, (which is never fun on a hot day outside.) This appetizer was great for the pool as it was light, refreshing (and had no carbs for the ladies in bikinis.)
I kept it on a chilled plate with ice underneath too! (easily find online by searching “iced appetizer platter” and a variety will pop right up. Just make sure that your ice/water touches the bottom of the food to keep it cool.
I also made this for a recent wedding shower, and it was a huge hit at the party too!
Ingredients:
1 container Whipped Chive Cream Cheese (you can use regular too, but this does make it easier than softening)
2 tbsp Dill, chopped (the squeeze tubes are great if needed too.), divided
1 tbsp lemon juice
4 ounces smoked salmon
1 English cucumber (or peel if too thick of skin of a regular cucumber.)
Directions:
Slice cucumbers to your thickness desire.
In a small bowl, combine cream cheese, chopped dill, and lemon juice.
Layer: Cucumbers, Cream Cheese, Smoked Salmon. Top with Fresh Dill.
Serve Chilled.
