You know those nights when you argue with your children about what to have for dinner. They say they just want nachos (which I seriously love), but I was trying to be healthy! So we compromised on this “Taco bake”. This was an awesome compromise for dinner. A little healthy, a little nacho!


  • 1 pound ground beef
  • 1 cup chopped onion
  • 1/2 cup water
  • 1 (1 ounce) package taco seasoning mix
  • 1 (10 ounce) can black beans (drained/rinsed)
  • 1 (10 ounce) can corned (drained/rinsed)
  • 1 cup salsa
  • 2 cups shredded Cheddar cheese
  • 1 avocado, sliced
  • 1 fresh tomato, sliced
  • 1 (6 ounce) can sliced black olives (optional)
  • 1/4 cup shredded lettuce
  • 1/2 cup sour cream
  • Tortilla Chips


Preheat oven to 350 degrees. Follow the package on the taco seasoning packet and cook beef in seasoning.

In casserole dish, add ground beef, black beans, corn and salsa. Toss and top with shredded cheddar cheese.

Bake about 15 minutes, until warmed through and cheese is bubbly. Allow to cool for 5 minutes.

Top cooked beef mixture with avocado, sour cream, tomatoes, and olives.

Serve warmed with tortilla chips.
