
When you’re trapped inside thanks to COVID-19 or Coronavirus, why not get creative and come up with a dish that plays on our quarantine. I figured what better recipe to use a Corona than Beer Cheese Dip. (It also helps when your fiance orders pretzels and cheese everywhere he can get his hands on it… and he misses breweries more than anything else right now.)

A few good tips with this recipe include to use freshly grated cheese. Research for the recipe explained that the pre-shredded cheese typically as a coating or flour, which can affect the texture. Another one is to adjust the thickness, you can either add more milk, or if it’s not thick enough, add more cheese. (If you don’t have extra cheese just in case, I would use 1 cup of beer to start with.)

Ingredients:

- 2 tbsp butter
- 2 tbsp flour
- 1 bottle beer (used corona, but beer choice is up to you)
- 1/2 cup whole milk (or half-and-half)
- 3 teaspoons mustard (Dijon or whole grain mustard)
- 3 cups freshly-shredded cheese (ex: Cheddar, Gruyere, Colby, etc.)
- Soft Pretzels, french bread, apples (for serving)
Directions:
Melt butter in a large saucepan or saute pan over medium heat, then whisk in flour.
Whisk in the beer, milk, and mustard. Whisk until smooth. Continue cooking until the mixture is slightly thickened and simmering.



Add cheese and whisk until smooth.
Reduce heat to low. Taste and adjust seasoning with more mustard, cheese, salt, etc.


Serve warm!
