Grilled Zucchini, Gnocchi and Tomato Salad

What says summertime more than fresh vegetables and a hot grill? This recipe was perfect combination of everything we love. You start with grilling a fresh zucchini, add in some fresh tomatoes and basil, and toss in a salad. Serve with your favorite grilled meat and chilled cocktail!

Serve alongside this Zesty Grilled Lime Salmon!

Ingredients:

  • 2 medium zucchini (1 lb total), quartered
  • 1 lb gnocchi
  • 3 tbsp extra-virgin olive oil
  • 2 tsp lemon juice
  • 2 cloves minced garlic
  • 3/4 lb tomatoes, chopped
  • 2 tbsp fresh basil, chopped
  • 3 oz mild feta cheese (about 1/2 cup)
  • Salt and pepper to taste

Directions:

Preheat grill to high & start a pot of salted water boiling.

Brush both sides of zucchini with olive oil, with salt and pepper.

On a grill that’s preheated to high, lay the zucchini with the cut side down and cook about 3-4 minutes. When you see grill marks, flip over to second white side and grill about 3-4 minutes more.

Then turn over so green skin of zucchini is down and grill 2-3 minutes more. Zucchini should be slightly soft.

While grilling, boil gnocchi (following directions on the package. We used mini gnocchi here, which only takes 2 minutes to boil.)

At the same time, whisk olive oil, lemon juice, and garlic.

In a large bowl, combine dressing, grilled zucchini, diced tomatoes, feta, cooked gnocchi, and basil. Season to taste.

Finish with extra basil & feta on top.

Serve Warm or room temperature.
