
Sometimes you need to make your vegetable a little bit more indulgent. Whether that’s to try to get your 6 year old to eat it (fail!) or just want something low carb and creamy, this is a great side dish. It pairs great with a baked potato, grilled chicken, steak, etc.

For your broccoli (or cauliflower if you need a substitution) can be frozen or fresh – just make sure you’ve cooked it just through.
Ingredients:
- 5 cups broccoli florets, cooked (about 2 crowns)
- 8 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 tbsp ranch seasoning mix
- 1 cup cheddar cheese

Directions:

Preheat oven to 350 degrees. In a small bowl, add the cream cheese, sour cream, 1/2 cup cheddar, and ranch powder to a small bowl and mix well to combine.
Stir the cream cheese mixture into the warmed broccoli until well combined.
Transfer broccoli to an 8 x 8 baking dish and sprinkle the other 1/2 cup cheddar cheese on top.

Bake for 10-12 minutes, until cheese is melted and dish is warmed through.
