To. Die. For! I was staring at this recipe on Instagram and knew I needed it asap! Salty pickles, fresh dish, and protein-packed eggs? It was so delicious, and also a pretty dish!

I’m more of a ‘eat this on crackers’ than ‘have it in a sandwich’ type person, but there are always so many options!


  • 6 Eggs, hard boiled
  • 1/4 cup Mayonnaise
  • 1 tbsp Dijon Mustard
  • 2 tbsp Capers,
  • 2 tbsp chopped pickles, and/or dill pickle relish
  • 1 tbsp Pickle Juice
  • Chopped Fresh Dill (optional)


Boil eggs, peel and finely chop. In a bowl with eggs place capers and chopped pickles.

In a smaller bowl add in mayo, Dijon, pickle juice. Whisk all together.

Pour dressing over egg salad and dill and toss together.

Top with extra dill. Serve chilled.
