Soup is so such an awesome winter dish, cozy and warm. What make this soup even better is that the smoky cheese makes its creamy and delicious! The pureed beans help thinkin the soup, and crowd-pleaser for all.

It’s also super helpful this smoky cheese soup is super easy. You most likely have the ingredients in your pantry, but may need to get some extra smoky cheese. (This brand is from Target, but Aldi and Trader Joe’s both had some delicious smoky cheese.)

(Note: If you need your soup to be extra smooth, strain through a sieve.)

Ingredients:

  • ¼ cup Olive Oil
  • 1 small onion, diced
  • 2 Garlic Cloves, minced
  • 1 (15-oz.) can cannellini beans, drained and rinsed
  • 4 (1 box) cups Chicken or Vegetable Stock
  • 1 cup sour cream
  • 8 oz. Smoked Cheddar Cheese, shredded

Directions:

In a warm skillet, add olive oil and onions. Cook until softened, about 3 minutes, then add garlic for 1 minute. Stir in the chicken broth, cannellini beans. Bring to a boil over medium-high; reduce heat medium-low, and simmer, stirring occasionally until warmed through, about 5 minutes.

Using Immersion hand blender (or blender in batches), add beans until pureed.

(note: if you neeed the soup to be without skins, etc., use sieve to strain the thinest skins.)

Once pureed, add back to pan. Add hand-shredded smokey cheese.

Once melted through, served warm.
