Chicken, Tomato, Feta and Spinach Bake

After the TikTok feta and tomato phenomenon of spring 2021, this recipe felt like a fun twist on that! However, this is a flavorful combination that’s protein-packed, saucy, and cheesy.

Layer fresh spinach, chicken, tomatoes and cheese, this simple recipe is made in just 1 pan. Who doesn’t love simple clean up on top of a delicious meal.

(If you need to use marinara sauce instead fresh tomatoes, that would be a great exchange.)

Serve alongside some cooked pasta or with fresh baked bread.

This recipe is great for 2 people, which I made for me and my dad, or for the family of 4. (So pictures below are for 2, not 4, like the recipe.)

(Optional change – take out the capers and finish with basil to be more like the original tiktok and stay in the Italian flavors vs the Greek flavors. Also, this would be amaaaazing with a white fish, and just adjust cooking time.)

Ingredients

  • 4 boneless, skinless chicken breasts (4-5 oz. each)
  • 3 stuffed cups baby spinach
  • 2 tbsp olive oil, divided
  • 2-3 cup tomatoes, diced (or marinara sauce)
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp capers, drained

Instructions

Preheat the oven to 425 degrees F. In a 9×13 casserole dish, spread out spinach in an even layer. Set aside. Toss with olive oil and salt and pepper.

In a bowl, rub the chicken breasts with olive oil and a generous amount of salt and pepper. Place the chicken in a single layer on top of the spinach.

In another bowl, toss the chopped tomatoes, garlic and feta cheese.

Top each chicken breast the tomato and cheese mixture.

Bake uncovered for 25-35 minutes until the chicken is cooked through (internal temperature is at least 165 degrees F).

Top with fresh basil before serving over pasta.
