Green Pork Chili (in a slow cooker)

 

This less-traditional chili still has all of those delicious elements you want to have in a chili; spice, meat, and beans.  I have made this with chicken many times, but this ‘Other White Meat’ also lends itself to a chili.  This a great meal to serve to a crowd.
 
Ingredients
1 tablespoon oil
1 onion, chopped
2-3 pound pork loin, fat removed
2 jars tomatillo salsa
4 cups chicken stock
2 cans white beans, drained and rinsed
2 tablespoons cumin
1 fresh jalapeno, chopped or jar of chopped jalapenos, optional for heat
Fresh cilantro, optional
Sour Cream, optional
Salt and pepper
 
Directions:
Heat oil in a shallow, sauté pan.  Salt and pepper the pork loin.  Sear all sides, turning as the sides brown.

 

In slow cooker, add chopped onion and place pork loin on top.  Add green salsa, chicken stock, cumin, and white beans.






After cooking

Put on low for 8 hours, until the pork is tender.  Remove the pork. Shred and place back into the chili.

 

 
(Tip: The choice in green salsa will affect the heat level in the salsa. Make sure to pick that according to how spicy you would like your salsa.)
 
Allow to sit on warm for at least 15 minutes, or until ready to serve.


 
Serve topped with fresh chopped cilantro and an optional dollop of sour cream.
