Jalapeño Pimento Cheese

Not growing up in the south, I was not understanding the love for Pimento Cheese when I first moved to Clemson, South Carolina.  I actually do not enjoy roasted red peppers at all, so pimentos aren’t naturally a food I would choose to eat.  However, in the last few years, I have become added to this amazing dip.  The Palmetto Cheese brand of pimento cheese is delicious!  I had a friend make this recipe at one of our monthly cooking clubs, and it was a hit.  This can be served cold or warmed through. Enjoy, y’all!

 
Ingredients:
1 package extra-sharp Cheddar cheese, shredded
1 package cream cheese, softened
1 jar diced pimientos, drained
1/2 cup pickled jalapeños, diced
1/4 cup mayonnaise 
Frozen Mini-Biscuits (optional)
 
Directions:
 
 
 

Using the dough blade in a food process, add all of the ingredients. Pulse until thoroughly mixed.  (You can do this by hand, but this step is very easy.)

Finished Pimento Cheese (without dye added)
 
(Note: I added green dye because I was going to an event where I wanted the green theme.)
 
 
Cover and chill.
 
Bake mini-biscuits as directed on the package.
 

 

Spread pimento cheese on biscuits. Serve warm.
