My absolute favorite dish to make with my nephews is MEATBALLS. There is something about getting your hands dirty in the raw meat that not only do the boys all love, but I also will gladly delegate out. This meatball sub though is a super easy recipe when you’re looking to throw something together, or even pack for a picnic. Another added bonus is that you can use almost any kind of meatball that your family loves and any kind of sauce.

Classic Meatball

Zucchini Meatballs
Buffalo Chicken Meatballs
(or even you can use any frozen ones from the store!)
We served this with a nice green salad (or for the 2 & 10 year olds, green beans.)
Theo, our resident meatball master (who picked the measurements of onion, garlic powder, parm, and breadcrumbs) making the meatballs that we baked off first.
Ingredients:
Hoagie Rolls (make sure they are thicker. We only had hotdog buns, and although it will do, it would be better with a thicker bun.)
Meatballs of your choice, (cooked), then warmed through
Marinara Sauce
Shredded Mozzarella or Italian Cheese
Directions:
Preheat oven to 400 degrees F.
In an oven safe dish, open hoagie rolls. Add in as many meatballs as will ‘comfortably’ fit. (Depending on the size of the meatball and size of the bun will affect how many you can actually add.)
Top with marinara sauce and shredded cheese.
Bake for about 5-10 minutes or until warmed through, then broil for the tops are bubbly and the bread crispy. Serve Warm.
