Brie, Blackberry, and Thyme Crostini

This easy to make appetizer is perfect to throw together on a weeknight, or for this particular display, a wedding shower. It can be changed out for any other flavor jams other than blackberry, another cheese such as goat cheese or cheddar, and even fresh herb changes! Follow the basics (and adjust melting time) and these will be stolen off the table.

Ingredients:

1 loaf french bread, sliced
1/4 cup extra virgin olive oil
1/2 cup blackberry jam
1 wheel brie cheese, sliced into rectangles
Fresh thyme leaves
Salt

Directions:

Preheat oven to 350 degrees. On a baking sheet, line sliced french bread up and brush with olive oil. Sprinkle with salt. Bake approximately 5 minutes.
(note: depending on how crunchy you want your final product you can either flip and bake for 5 more minutes, or skip the pre-baking at all and just add toppings.)

Allow to cool 2 minutes or so, in order to be able to hold them and top. Layer blackberry jam and brie.

Bake in oven until cheese just melted (about 3-7 minutes, depending on how thick your cheese is cut.)

While warm, sprinkle thyme leaves onto each piece of brie. Allow to rest for 2 minutes and serve.
