Cowboy Butter (for corn & more)

Let me first tell you, that the second half of this butter went completely missing! It was so incredibly good, I couldn’t wait to melt it over pasta, a steak, chicken, put into my Instant Pot, etc… and you know what? The second half of the stick was Never Found!

(Note: we assume a dog got up and got it, and not the 5 year old… but I kind of wish it were me!)

Ingredients:
1 sticks salted butter, softened
1/4 cup finely minced fresh herbs (parsley, dill, basil, etc.)
Sprinkle of cayenne pepper|
1-2 tbsp of lemon juice
Salt to taste

Directions:

In a mixer (with the paddle if available), whip all of the ingredients until mixed well. Scrape the sides as needed. Adjust seasoning to add more of what you like.

On top of a long sheet of plastic wrap, scrape the butter mixture in the middle. Shape to the width of your choice.

Roll tightly, squeezing out the air and forming into a log.

Place roll into the fridge for it to harden (or freezer if short on time.)

Prepare your corn (I like to boil for 8 minutes.)

Take stick and rub on corn. Serve warm.

(Other suggestions I read on how to use it? Original is to put it on a steak, but you can do it with any protein, stir into warm pasta or rice, or just eat it on bread!)
