So much drippy cheese and sauce!

My favorite way to design a recipe is to be inspired by something else! This particular recipe was that my fiance said he wanted chicken for dinner, but I really needed him to eat leftover ham. Plus, I love that this was creamy, but Keto! Luckily, it worked out that it was a huge hit, and has become a regular in our household!

Paired Great with a crispy Sauvignon Blanc as it was a cream dish, and clean wine.

Ingredients:

4 thinly sliced chicken breasts
1 tbsp olive oil
4 slices ham
4 slices Swiss cheese
2 cups Parmesan cream sauce (see recipe, but also listed below)
1 cup frozen spinach defrosted and strained
1 cup frozen broccoli
1 tsp salt and pepper

Directions:

Preheat oven to 350 degrees. Heat 2 sauce pans with olive oil.

In a saute pan, season and sear chicken so that it is almost cooked through. (do in 2 batches if you need.)

In a casserole dish, layer seared chicken, ham slices, and cheese. (I honestly didn’t have swiss and used munster, so You Do You!)

While chicken in cooking, make Parmesan cream sauce. (See link above, or short cut recipe is 2 cups (16 oz) heavy cream, boil until reduce. add 1/2 cup grated Parmesan.)

When sauce is made, add spinach. (Optional here, but I like the extra vegetables.)

Pour sauce over casserole dish.

Bake for about 20-30 minutes, until browning and bubbling.

Serve as is for Keto meal, or over potatoes or pasta!
