Shrimp Dip with Bacon and Horseradish

Are you like me and think that shrimp has to be the best protein ever? It has to be the best for everything from dips to tacos to quesadillas to salads! So I knew I wanted it for my dad’s surprise 80th bday party! (Plus, I had minimal time to prepare and to cook, and again, shrimp is the fastest and easiest.) Granted, I only knew about half the guests very well, but the said they loved the shrimp dip… and sadly, none came home with us! haha.

I think the horseradish was a great little kick here for those of us that don’t love too spicy (like hot sauce), but just a subtle kick.

Serve chilled with your favorite cracker, or this crowd liked it with tortilla chips too. May you all have many fun birthday apps in your years! 🙂

Ingredients:

  • 8 ounces cream cheese, room temp
  • 1/4 cup mayonnaise
  • 2-3 tbsp lemon juice
  • 2 tsp horseradish
  • 1 pound cooked shrimp, seasoned & roughly chopped
  • 2 Tbsp finely chopped fresh parsley, divided
  • 2 slices cooked bacon, chopped
  • Serve with crackers or veggies or your choice

Directions:

In a medium bowl, whisk the cream cheese, mayo, lemon, and horseradish. Adjust horseradish and lemon to your taste at this point.

Take most of the chopped shrimp & parsley and fold into mixture. (Reserve a few to plate on top.)

Top with Bacon, 1 tbsp parsley, and remaining shrimp.

Chill. Serve cold with crackers or crudite.
