Coca-Cola Pulled Pork Loaded Nachos

Whether you’re looking forward to fact that it’s another weekend, or the Coca-Cola 600, this easy recipe is a crowd-pleaser. This recipe starts with a slow cooker pulled pork made with Coca-Cola, added to some melted cheesy chips, and topped with whatever makes nachos delicious to you!

So much Cheese & BBQ!

If you’re a NASCAR fan, this would be the perfect appetizer for any race, or the Charlotte local race, the Coca-Cola 600! When making the pork, you use the coke to cook the pork butt. (It makes a great broth after to use in a soup, or add back into the pork.) Plus, when tailgating or watching the race on tv, nachos are always a party favorite.

Once you’ve added the deliciously sweet and savory pulled pork and cheese, you can top the gooey nachos off with any of your favorite toppings!

Looking for a fun alternate? Make them TOT-chos by changing out your chips for some crispy tater tots.


  • 1 pork butt/pork shoulder roast 
  • Barbecue rub (or salt)
  • 1/2-1 onion sliced (optional)
  • 1 can Coca-Cola
  • 1 cup barbecue sauce (to taste, divided)
  • Tortilla Chips
  • Shredded cheese (Cheddar, Mexican blend, or Colby)
  • Optional Toppings: Black beans, Sour Cream, diced tomatoes (or pico de gallo), jalapenos (fresh or pickled), sliced green onions, avocado, cilantro, tomatoes, extra cheese sauce, or any toppings you love!

(Fun tip: Change up your sour cream with some Alabama White Sauce from another local Charlotte Food Blogger , “Slice of Jess”. )


To prepare the pork: Place the onion in the bottom of the slow cooker. Rub the outside of the pork with the barbecue rub of your choice (or something as simple as (salt, pepper and garlic powder, etc.) Coat all sides.

Place pork in slow cooker. Pour the can of coke into the slow cooker and cook on low 7-8 hours or high 4-5 hours.

Once falling apart, use 2 forks to shred the pork. Put back into the slow cooker. (Depending on how much juice was left, I would recommend removing all the liquid, then add some back in to make it perfect level of juiciness.)

Add barbecue sauce to taste.

Keep Warm to use on Nachos.

To Make Nachos: Preheat your oven to 400 degrees.

On an oven safe dish, place a layer of tortilla chips and cover with shredded cheese. (Suggested dishes include cast iron dish, baking sheet, or baking dish.) Bake for about 3 minutes, until cheese is melted.
(If you have a few extra minutes, repeat this again! Double the melted cheese and chips!)

Place your warm Coca-Cola Pulled Pork on top of melted cheese.

Top with all the delicious layers of your choice: black beans, tomatoes, avocado, sour cream, etc. Drizzle top with extra barbecue sauce!

Serve immediately.
