
You know that moment: When someone asks you to come over that evening, and you think… But I don’t have anything to bring? This recipe is one of those recipes, that is not only simple, but I have on hand at almost all times. So grab a food processor, the ingredients below (and some crackers or chips), and you’re good to go!
Feel free to change out the fresh herbs (parsley, thyme, or even dried herbs) and make a new, delicious dip.
Ingredients:

- 1 – 15 ounce can cannellini beans, drained and rinsed (or any white bean on hand)
- 1/4 cup loosely packed fresh basil leaves
- 2 tablespoons fresh lemon juice (about 1/2 lemon)
- 1 garlic clove
- 1/2 teaspoons salt
- 1/2 cup olive oil
Directions:

In the bowl of a food processor, combine the beans, basil, lemon juice, garlic, and salt. Pulse on and off until the mixture is coarsely chopped.
Gradually mix the oil until the mixture is creamy.
Season the puree with more salt and pepper to taste. (Adjust with a little water or olive oil if too thick for your taste)

Transfer the puree to a small bowl and serve topped with fresh basil. Serve with crackers, chips, or pita toasts.
