

As the weather gets warmer, let’s crack out the grill and get some light veggies on it. Topping this smoky zucchini with some delicious herbs, feta dressing and feta, it will be a great side for any dish! Try it with some salmon, grilled chicken, or shrimp.
For this particular recipe, I also used a Local Charlotte Product: https://vegetablekingdom.com/ Feta Dressing!
Greek style feta dressing is also yummy on salads, steamed vegetables, grilled meats, wraps and sandwiches
Plus the ingredients are all natural: Water, Canola Oil, Olive Oil, Feta Cheese, Lemon, Non-Fat Milk, Egg, Vinegar, Onion, Garlic, Dill, Parsley, Spices.

Ingredients:
- 2 zucchini squash (about 1 lb), sliced
- Extra Virgin Olive Oil
- 1 tsp
- Juice of 1 lemon
- 1 garlic clove, minced
- Salt and pepper
- 1/2 cup fresh parsley
- 2 tsp chopped fresh dill
- Feta or goat cheese, optional
- Cherry Tomatoes
Directions:

Drizzle about 3 tbsp extra virgin olive oil on the sliced zucchini, and sprinkle with salt.
Heat a grill or griddle until hot, add zucchini.. Grill for 4 minutes or so, turning over a couple of times until zucchini are cooked through and perfectly charred.
While zucchini is cooking, mix chopped herbs and olive oil in a small bowl.
Transfer grilled zucchini back to a platter with tomatoes. Add lemon juice, salt and pepper.

Top with olive oil herbs, feta dressing, and crumbled feta. (or any combination of.)
Serve at room temperature.
